my favorite skinny margarita

I may be mistaken to be younger than my 18 year old sister quite often (I swear it’s just the height difference!!) BUT I am of legal drinking age. Lately, I have been sippin on these homemade skinny girl margaritas! I promise you, you will not miss the preservative-filled, high-sugar, 500 calorie per serving (could be a bit of an exaggeration) sweet and sour mix that is used in most margaritas!

Blondie’s Skinny Girl Margarita

makes 1

2 squeezed limes

2 oz. tequila (I like patron, but let’s be real…I’m a college student so that only happens when I go home!)

touch of agave nectar (I get this at trader joes)

Shake up and serve over ice with a slice of lime! So refreshing and perfect with a yummy fajita night dinner!

Enjoy & let me know if you try them out!

father’s day!

Hi everyone! Hope you all had a fabulous weekend. School is finally over so I have more time to devote to the blog and I am excited about it! Although I will be attending summer school, I’m hoping to be able to blog more frequently and often!!!!! I missed you guys :)!

I had a great weekend spent with family. Father’s day was memorable and might just have to be repeated next year! My Nana Min came to visit all the way from Seattle, Washington so we took her on a hike near South Lake Tahoe to a scenic spot at Wood’s Lake.

Our day consisted of….

hangin with the best dad ever

the stylish cookie dog posing for the camera

eating my fave new chips, which are gluten free too!

preeeetty views

balancing on treacherous logs

a visit to Sorensen’s in Hope Valley for dinner!

AND of course, dessert. Sorensen’s famous mixed berry cobbler!

it was a great day!!!

happy, healthy holidays!

Oh how I’ve missed you guys! My excuse to explain my absence is that I thoroughly enjoyed my time with friends and family, sans technology. Who can blame me?

I hope everyone had a wonderful holiday and safe New Years! I’ve been a busy girl so here are some pictures to catch you all up :)!

OH MY GOD!!!! A Vitamix!

my dad knows me so well. i love dogs and peanut butter! best card ever and best dad ever.

after exchanging & opening gifts we nibbled on these babies and sipped tea (from Aveda...ya I know weird. it's a hair salon that sells tea! but it's my new favorite!) while watching christmas with the kranks.

don't mind me in all my early morning glory. i just rolled out of bed to make this green smoothie in my new vitamix!!

Christmas morning, I woke to find some sparkly Juicy Couture stud earrings, Burt’s Bees hand cream, lotion & chapstick (addicted to their almond milk beeswax hand creme and chapstick), yoga pants & other goodies! Then my dad, Kristin and I had a plane to catch! Every winter, we meet up with my dad’s side of the family for a ski trip. We’ve been going to Big White in BC, Canada for years but just last year switched to Whistler. I LOVE it!!

kristin and i in front of the olympic rings!

veggie burger at a cute cafe in Whistler called Ingrids!

Kristin and I are the only snowboarders in the fam so we usually stick together – getting stuck in powder, falling while exiting the chairlift, flying off jumps in the terrain park, braving cliffs, and taking pictures on the slopes.

say cheese! notice our face is really cold in Whistler for these cali girls!

After a great ski trip in Whistler, it was time to head back to the states to celebrate 2012!!!!!

dysfunctional new years pic with my friendsss.

it's almost midnight!

It was a fabulous night to say the least. And I’ve finally decided on a New Year’s resolution. My friend Sheeva came up with one that was too good, I had to steal. It is to make sure my friends and family know how much I love them because the unexpected sometimes does happen, and life is much too short.

Tonight my sister, mom and I are going to watch the documentary, Forks Over Knives. I heard about it from a friend who told me I must watch it!! I’m excited and will have a review tomorrow :).

WIWEFW: What I Will Eat Finals Week

Happy tuesday punkins!

It’s the beginning of a new week…and finals for me! Bleh.

During finals week, I need lots of brain food to keep me alert and sharp for the endless hours of studying.

I will be starting off my days with something like…

2 scrambled eggs with one morningstar sausage pattie, yellow bell pepper, crazy feta, spinach and an apple on the side!

1/4 c oat bran, 1/4 c oats, 1 scoop sunwarrior vanilla protein powder, cinnamon & water microwaved for 3 min. topped with chopped apple, walnuts & maple syrup.

a green smoothie. love my carlos cup from urban!

Snacks to quietly munch on in the lib…

the only flavor of zing bar i've tried! chocolate and coconut is a winning combo. definitely recommend!

one banana halved and slathered in ab, and topped with either coconut & choco chips or hemp seeds and goji berries! maybe too messy for the lib!

up close because they're soo pwetty.

luna chocolate dipped coconut

look at those chocolatey drizzles. my favorite luna bar flavor yet!

apple sprinkled in cinnamon which happens to be awkwardly next to my senior pictures...supes cheesy!

Lunch & dinner…

spinach salad with chicken, cukes, feta, red onion, cherry tomatoes, mustard, olive oil & balsamic!

rosemary chicken and steamed broccoli with lemon

spaghetti squash with meatless grounds, tomato sauce & assorted veggies

brinner! scrambled veggies & eggs and toast with chia seed jam

curried vegetables and tofu!

And knowing me, finishing with something sweet!

this will do.

Tonight as a little good luck token for finals I whipped up these babays.

Reese’s Peanut Butter Cup Blondies

3/4 c brown sugar

1/4 canola oil

3 egg whites

1 T vanilla extract

1 c whole wheat flour

1/3 c oats

2 t baking powder

1/4 t salt

~ 1 c chopped mini Reese’s Peanut Butter Cups

Preheat oven to 350°F. Coat an 8 by 8 dish with cooking spray. Mix the sugar and oil in a large bowl with a wire whisk. Add the egg whites and vanilla extract and whisk again.

Add the flour, oats, baking power, and salt. Stir until just combined.

stir stir stir!

Chop up the mini Reese’s. I chopped them in quarters first, then got lazy and just halved them!

chop chop chop!

Add the Reese’s and fold.

reese's goin swimmin! (i think i used a lot more than a cup)

With a rubber spatuala scoop the mixture into the baking dish.

top with chocolate chips if desired!

Bake 25-30 minutes, until the dough is firm in the center and a toothpick/fork comes out clean when inserted.

come to mama!

Enjoy :)!

P.S. These will go fast, so you may want to make another pan for yourself…just kidding..sorta.

Have a great week!!!

caramelized pecan banana bread - recipe coming!

oatmeal made with 1/2 c oats, 1 scoop vanilla protein powder, ~1/4 c milk (coconut), ~1/4 c water, and a couple generous shakes of cinnamon. cooked for 2 minutes in the micro, with strawberries, coconut butter and cacao bliss on top! <-- i couldn't finish it all, it was too rich! next time i'm just going to use either coconut butter or cacao bliss.

bluberry, banana & spinach smoothie with cacao nibs and chia seeds on top!

OOOOH! And I got some samples in the mail! I seriously LOVE getting mail, I used to get so excited when I was younger and got a letter in the mail (I still do!) If you want to make me really happy, send me something in the mail ;).

purchases from iHerb! sunwarrior vanilla protein powder, liquid vanilla stevia, and stevia baking blend.

nativas naturals sent me these to try!

trail mix with mulberries (first time trying them! they are the golden pine cone looking things), goji berries, raw cashews, goldenberries and cacao nibs. this is a unique mix and a little different from your usual trail mix, but it grew on me and i'm definitely going to buy this again!

power snacks - little squares of on-the-go deliciousness. made with dates, chia seeds, sesame seeds, raisins, sunflower seeds, cacao, goji, maca, lucuma, and camu-camu powder. all of which are superfoods and natural!

cacao nibs! yummm! not as sweet as chocolate chips, but healthier 😉 perfect for sprinkling on yogurt, oatmeal, smoothies, etc.

Thanks for all the awesome samples Nativas Naturals!

It’s big/ little week for the new girls in my sorority, so I’m off to deliver my little her present for today (a candy message board)! She won’t find out it’s me until the end of this week. Secrets shhh!

Hi lovebugs!

So, it’s midterms week (ah how I love love love the quarter system…grrr). I’ve been a busy bee attending classes, catching up on missed classes (my bad), doing homework, studying, etc. And in between all that fun stuff I’ve been a busy bee eating, cooking, baking, laughing, dancing, singing, working out…ya know, the ushe. Minus blogging. I’m sorry!

And now to be even more of a disappointment, it’s really time for me to buckle down and power through these 3 midterms I have coming up, so I would like to apologize in advance for  being MIA these next couple of days.

While I’m gone, I beg you to enjoy one of these for me..

cake batter funfetti blondies from girl meets life.

Or these…

peanut butter fudge pretzel brownies from how sweet it is.

Or both. Like what happened at my apartment this weekend. No. Regrets. At. All.

Calories don’t count during midterms week anyways. Everyone knows that.

Ta ta for now!

we’re back and ready to attack

Hey babess!

The apartment is not quite finished (aka my room). Pictures are coming soon! We are beyond obsessed with the new place. I’ve been having the time of my life catching up with all my college friends and so-rawrrr-ity sisters before school actually starts (next week eeek)!

This week has been full of frat parties, working out, singing and preparing for rush week (“i wanna be a pi beta phi boom boom!!”), dancing in the apartment, and making delishhh food (DUH).

Here are some pics from the past week/weekend:

Enjoy! 🙂

pizza & pasta please!

Ciaoooo bellas!

A few nights ago, I went over to my friend Hannah’s house to have dinner with her fam (my other bestie Sheeva was there too!). Ohhh myyy goddd let me just say we had the most amazing time cooking, laughing and chatting! Followed by the most ahh-may-zing italian feast!

To start …

baguette with lemon infused olive oil & balsamic vinegar

Stars of the show …

speciality herbs & salts! soooo cool. i want this!

fresh egg pasta from the farmers market! omg if you've never had fresh pasta before, YOU MUST TRY IT.

fresh roasted red pepper ravioli filled with artichokes!

mmm mmm good tomato sauce

zucchini & squash sauteed in garlic-infused olive oil by the one, and the only, SHEEVA!

Rustic Crust Gluten Free Pizza Crust

testing out the gluten-free crusts!

pizzas topped by yours truly with pizza sauce, fresh mozzarella, basil, heirloom tomatoes & parmesan.

A lil love, a sprinkle of laughter, mixed all together with some good friends and you’ll get this healthy, satisfying dinner!

super stoked to dig in

The results …

egg pasta with red sauce & parmesan: the favorite!

ravioli with the veggies, olive oil & parmesan. this dish got mixed reviews. the artichoke filling was a little overpowering, but i still thought it was deeelish!

all finished! they survived the bbq!

dontcha want some?

Sooo then finally it came time to try everything!!

I LOVED IT ALL. The pastas were incredible and I’ll definitely be buying fresh pasta (or making my own?) in the future. Cooking fresh pasta takes less than 2 minutes!! Awesome for dinners in a hurry.

It is amazing what a little olive oil can do too! I NEED garlic and lemon infused olive oil. Ohemgee.

The gluten free crusts were different, but something I could get used to! They had a little bit of a strange texture but we think it might have been because they had been barbequed. I’m not giving up on them! The toppings were simple yet delicious :).

But we weren’t done yet …

Hannah’s dad had been to an italian restaurant that served dessert pizza. It was a thin pizza crust covered in nutella, strawberries and powdered sugar.

A quick run to the store and in no time the pizza crust was in the oven! We used Pillsbury pizza crust, flattened the dough out on a cookie sheet and followed the directions that came with it.

the pizza crust covered in nutella, strawberries and powdered sugar!

Holy yummmm. It was dangerous. We devoured it in less than 5 minutes.

I will be making this again soon and so should you! Easy peasyyy.

Thanks to Hannah and her family for having me over :)!

Hope you all had a great weekend!
