Hi lovebugs!

So, it’s midterms week (ah how I love love love the quarter system…grrr). I’ve been a busy bee attending classes, catching up on missed classes (my bad), doing homework, studying, etc. And in between all that fun stuff I’ve been a busy bee eating, cooking, baking, laughing, dancing, singing, working out…ya know, the ushe. Minus blogging. I’m sorry!

And now to be even more of a disappointment, it’s really time for me to buckle down and power through these 3 midterms I have coming up, so I would like to apologize in advance for  being MIA these next couple of days.

While I’m gone, I beg you to enjoy one of these for me..

we’re back and ready to attack

Hey babess!

The apartment is not quite finished (aka my room). Pictures are coming soon! We are beyond obsessed with the new place. I’ve been having the time of my life catching up with all my college friends and so-rawrrr-ity sisters before school actually starts (next week eeek)!

This week has been full of frat parties, working out, singing and preparing for rush week (“i wanna be a pi beta phi boom boom!!”), dancing in the apartment, and making delishhh food (DUH).

pizza & pasta please!

Ciaoooo bellas!

A few nights ago, I went over to my friend Hannah’s house to have dinner with her fam (my other bestie Sheeva was there too!). Ohhh myyy goddd let me just say we had the most amazing time cooking, laughing and chatting! Followed by the most ahh-may-zing italian feast!

To start …

Rustic Crust Gluten Free Pizza Crust

pizzas topped by yours truly with pizza sauce, fresh mozzarella, basil, heirloom tomatoes & parmesan.

A lil love, a sprinkle of laughter, mixed all together with some good friends and you’ll get this healthy, satisfying dinner!

The results …

ravioli with the veggies, olive oil & parmesan. this dish got mixed reviews. the artichoke filling was a little overpowering, but i still thought it was deeelish!

Sooo then finally it came time to try everything!!

I LOVED IT ALL. The pastas were incredible and I’ll definitely be buying fresh pasta (or making my own?) in the future. Cooking fresh pasta takes less than 2 minutes!! Awesome for dinners in a hurry.

It is amazing what a little olive oil can do too! I NEED garlic and lemon infused olive oil. Ohemgee.

The gluten free crusts were different, but something I could get used to! They had a little bit of a strange texture but we think it might have been because they had been barbequed. I’m not giving up on them! The toppings were simple yet delicious :).

But we weren’t done yet …

Hannah’s dad had been to an italian restaurant that served dessert pizza. It was a thin pizza crust covered in nutella, strawberries and powdered sugar.

WELLL OBVI WE HAD TO MAKE IT!

A quick run to the store and in no time the pizza crust was in the oven! We used Pillsbury pizza crust, flattened the dough out on a cookie sheet and followed the directions that came with it.

Holy yummmm. It was dangerous. We devoured it in less than 5 minutes.

I will be making this again soon and so should you! Easy peasyyy.

my grand blog debut

Hello everyone!

My name is Kara. Welcome to Blondie Bakes and Bikes, a blog about my life as a collegiate, health nut, work-out-a-holic, fashionista, and bargain shopper (well, most of the time!).

that's me!

I am beyond excited to meet you, and finally make a name for myself in this big, beautiful blogging world! I have always had an overwhelming interest in eating healthy and working out (I blame thank my mom for that!) so when I found Angela’s healthy living blog, Oh She Glows, I fell in love and have been looking at food blogs ever since!

When I went off to college this past fall, I knew I wanted to major in something health related (my mom being a yoga instructor and my dad, a public health professional). I decided to major in Nutrition Science, because I strive to fuel my body with real, good-for-me foods and would love to expand my knowledge! I am hoping to share my newfound learning with you, my readers, as well!

Although, as I thought more and more about creating this blog, I decided I didn’t want the focus of it on food and nutrition. After all, I am not a registered dietician (only a naïve undergrad) but most importantly, I “eat to live, not live to eat” (one of my momma’s favorite phrases).

Don’t get me wrong, I LOVE food. So much, in fact, sometimes I find myself “living to eat” and completely going against said philosophy. But who doesn’t enjoy everyday indulgences?

I believe in order to maintain a blissful and stress-free life, you must listen to that voice inside your head and treat yourself often. That got me thinking, indulgences don’t always have to be something you can eat. Like chocolate. Or in my case, ice cream.. and peanut butter…
