Hellooo! It’s What I Ate Wednesday! Let’s get to it 🙂 Also a big thanks to Jen for hosting the partayyy over at every week!

This recipe is from, my most recent obsession. It is a fitness/food blog by two friends, Karena and Katrina, both certified Personal Trainers and have designed their own nutrition plan and workout videos (a lot are free on their youtube channel). I absolutely love them! I heard about them in a Self magazine a few months ago and just recently started checking out their blog. They are such an inspiration (check out Katrina’s body transformation), are so genuine and have really helped motivate me to work for that beach bod I’ve always wanted. You should check out their blog if you haven’t already! They post free workout videos, recipes, motivational quotes, weekly check-ins, etc. They also have a store where they sell cute tank tops, lunch boxes, stickers…andddd they just launched their line of Beach Babe bathing suits (SOO cute! Right now they don’t sell sizes separately, so when they do, I will be ordering one…or two!)

lunch: a yummy salad from Pluto’s with spinach, garbonzos, kidney beans, cukes, broccoli, mango, strawberries and almonds. with whole wheat bread!

A day full of shopping ensued…

kristin and i decided to go out on a limb and try on lipstick at the MAC counter (i never wear lipstick!). i am wearing their matte lipstick called “ruby woo” and she is wearing “creme de nude.” i ended up buying the red!! i can see a makeup tutorial in the near future..

After shopping (I bought the red lipstick and some cute jean shorts from Urban Outfitters), Kristin and I rushed home because we wanted to make it to a workout class at our gym called Chizzled. I snacked on a few grapes before dashing out the door.

Chizzled was a great workout! We did lots of squats and pushups. I’m feelin in already and I love it! We both ran 1 mile on the treadmill afterwards but were too tired to do any more :p.

dinner: ezekiel wrap with hummus, half a homemade black bean burger (recipe being perfected!), cukes, home grown sprouts, red bell peps, avocado, spinach, and baby kale. with a pink lady apple on the side and lots of H2O!!

After din, I hung out with two friends from high school, Alexis and Sheeva but we were too busy catching up on each other’s lives that we didn’t end up following through with our plans of watching Project X and eating popcorn with chocolate chips (our faveee). Oh well! Missin the rest of the fab five though, Hannah and Jordan who need to come home!!!

p.s. I also noticed that I ate vegan today completely unintentionally! Maybe I am a true vegan at heart…

DIY: Cover a Lamp Shade


How is everyone? Finished up your holiday shopping? Good for you if you have!

I, on the other hand, have not. I still must brave the crowds, the lines, the slow-walkers, and the full parking lot, a few more times before all my shopping is completed. Yay for procrastination.

Another thing I have been putting off is my first DIY post. I had a plain white lamp lying around, and instead of throwing it out, I decided to fix it up!

(I ended up decorating the purple lamp with the silver sequined ribbon at the bottom of the picture because it looked boring next to the other completed lamp!)

To recover a boring lamp shade you will need:

– enough fabric to wrap around the entire thing

– newspaper

– pencil

– scissors

– clothespins

– pins

– spray adhesive

– Elmer’s glue

– ribbon, lace, fringe, etc.

– patience

– maybe another pair of hands (my wonderful mom helped me out on this one!)

Step one: Lay a large sheet of newspaper on the table. Place the lamp shade on it's side with the seam down.

Step two: Make an "x" where the seam meets the paper at the bottom and top of the lampshade. See my "x" up there?

Step three: Carefully roll the lampshade along the paper as you trace the top and bottom until you reach the seam again.

Step four: On the newspaper you should have two parallel lines (I darkened them with pen so you could see), and two "x" where the seam is. This should make a long rectangle. cut out the rectangle but be sure to leave 1" of space at the top, bottom and seam line.

Step five: Place the fabric face down on a clean, flat surface. Place the newspaper pattern on the fabric and pin the pattern in place. Cut out the fabric, using your pattern as a guide. You may want to iron your fabric after this step!

Step six: Break out the spray adhesive. Be careful not to spray your hands because... You. Will. Stick. To. Errthang.

Step seven: Spray the wrong side of the fabric with adhesive (in sections). Beginning at the seam, lay the shade on one edge of fabric and roll a few inches, smoothing out the bumps and stretching the fabric as you go. Then spray the next section and repeat unti you make it all the way around the lamp.

Step eight: Before letting it completely dry, pull back the edges from the lamp on both ends so that you can tuck them under for a cleaner look.

Step nine: I was generous with my 1" when cutting out the fabric sooo I needed to do a little trimming. This step is unnecessary if you have about an inch or less of fabric hanging off the edges.

Step ten: Lightly spray the fabric that was folded up, and tuck the excess fabric under. Put a thin line of Elmer's glue to hold the edges in place. This step was a bit tricky, so be patient!

Step eleven: Hold down the edges with clothespins and let them dry overnight.

Repeat step 8-11 to the other side so that it looks like this.

Step twelve: Take off the clothespins! WAHOO almost done!

Step thirteen: Hot glue ribbon to the edges or leave as is!

I am so satisfied with how the lamp shade turned out! Do It Yourself projects are my new fave. And from now on, I am going to buy plain lamp shades and jazz them up myself!

Hopefully you enjoyed this little DIY tutorial and are now inspired to create your own lamp shade or really anything else for that matter! It’s amazing how many things you can make yourself for much cheaper than buying from a store. Look on the internet for some DIY ideas..I always feel crafty after a nice long pinterest sesh ;).

If you don’t have Pinterest, I would definitely recommend getting it if you enjoy being easily distracted, are feeling hungry, or want to let your creative juices flow and get crafting! I tell ya, after spending an hour on pinterest looking at DIY things, I always feel the urge to craft. I guess this break is my time to do that! WIAW + goin swimmin!

Hello lovelies!

We’re already halfway through the week, can you believe it?!

I don’t have class until 2 on Wednesdays, so I appreciated the 12 hours of sleep that awaited me! (I went to bed at 1 am…which is actually kinda early compared to how late I’ve been going to sleep lately. I tend to turn into a night owl when I’m off at college.) I got up at 1 pm, and in my defense, I needed it! I felt well rested and ready for the day. And I didn’t feel like I could fall asleep in any of my classes. Success.

For breakfast?….lunch…okay, BRUNCH I had:

plain greek yogurt with cinnamon, chopped up organic fuji apple (omg love), and a crumbled up flavor and fiber bar! peach detox tea on the side because it's simply delicious, anddd i feel like my body could use a detox from this weekend.

cinnamon raisin flava! i used to get these all the time in high school and i loved them, so when i saw them at nugget it was an instinctive purchase!

nutrition facts! and did you know that you would have to eat 3 kashi tlc chewy granola bars to equal how much fiber is in this baby?! plus it's pretty low in calorie...only 130! eating 3 kashi bars would be 3 times 140...i don't feel like doing the math..but that's A LOT! the only downfall to these are that they're more pricey than kashi.

Then I went to class from 2-4, planned on working out, but I think I tweaked my back running the other day so I decided to go swim laps in our apartment complex’s pool! Swimming is the best exercise for those who have injuries…and it burns up calories in no time!

But first, I had a bite to eat.

stir fried veggies & quinoa in sesame oil and braggs liquid aminos.

Then it was swimmin time! I haven’t swam in soooo long, I’m ashamed. I’ve been on a swim team ever since I was 8, and literally lived in the water. It felt so good to get back into it! My wonderful and hilarious friend, Kirsten, joined me. We had a bit of a problem of chatting too much in between sets…but we’ll work on that ;).

Moving on…

When I came home from class earlier, I tenderized some chicken (put it in a ziploc and hit it with the bottom of a frying pan..what poor college students do when they can’t afford a meat tenderizer), seasoned it with s&p, and marinated it for about 3 hours.

Basil & Parmesan Marinade

inspired by How Sweet It Is


2 boneless, skinless chicken breasts, thawed

1/4 c olive oil

2 T balsamic vinegar

1 T dried basil

1 t dried mustard

2 cloves garlic, minced

2 T parmesan cheese (I used TJ’s shaved parmesan but any kind will work)


Mix all ingredients together in a large ziploc bag and refrigerate for 2-24 hours. Once you’re ready to cook, preheat your oven to 350 and set a skillet coated in olive oil to medium heat and cook chicken for 3 minutes on each side. The chicken should not be completely cooked all the way through. Place chicken in an oven safe dish and bake for about 10 minutes, or until it is no longer pink on the inside.

I later had an unpictured banana with almond butter as a study snack and now I’m sippin on some Good Earth tea! What a day of delicious and homemade eats!





and i’ve come out of hiding

Hi loves!

I’m sorry (for the tenth time) that I’ve been so MIA lately.

Rush week is finally over, phew! It was such an eventful, fun, yet exhausting week and I feel like I need a whole week to recover! Butttt, school has started so that means no break for moi! This quarter I am taking Chemistry, Biology, Research Methods in Psychology, and a class called Mushrooms, Molds and Society (sounds interesting huh?!). I’m ready for it all to fly by.

Here is a recap of what I’ve been up to lately!

Trying new things…

a mouthwatering nugget sandwich which included: multigrain bread with honey mustard (omg best ever), grilled chicken, lettuce, cucumber, sprouts, red onion, avo, and bell peps! with an iced green tea on the side (new fave! it's naturally sweet so you don't need to add sweetener!).

chocolate coconut water! seriously sooo good! it was just like chocolate milk but has more potassium than a banana 🙂 perfect for after a workout

chicken, veggies and brown rice from ket mo ree (awesome thai food restaurant) for julia's birthday!

a refreshing smoothie made with one frozen banana, one cup unsweetened vanilla almond milk, couple handfuls of spinach (i swear you can't taste it!), 1/2 cup frozen raspberries, a few shakes of cinnamon and topped with chia seeds!

fatty salad: mesclun lettuce, cukes, slivered almonds, garbonzo beans, and leftover herbed salmon (from the nugget). dressing was lemon juice, splash of flax seed oil, red wine vinegar and pepper!

sauteed veggies and tempeh in coconut oil, bragg's liquid aminos and bragg's sprinkle (both soo good i def recommend!).

winner winner chicken dinner (cooked in a skillet with s&p, bragg's sprinkle, and EVOO <-- extra virgin olive oil). with a side of broccoli and sauteed veggies.

a sunshine bbq veggie burger (wasn't that great, i prefer the original flavor!) with sauteed kale and bell peppers.

Work work workin out…

I was getting a little bored of running 5 miles on the treadmill (i don’t know how i did that over the summer) so I’ve been changing it up and doing more HIIT workouts (high intensity interval training). Here are a few I’ve been trying!

Workout 1 – 30 minutes

1) Warm up at an easy pace (3.5) for 3 minutes.

2) Jog at 6.0 for 2 minutes.

3) Increase speed to 7.0 for one minute.

4) Increase speed to 7.5 for one minute.

5) Increase speed to 8.0 for one minute.

6) Increase speed to 8.5 for one minute.

7) Repeat steps 2-6 three more times.

8 ) Cool down, walk at 3.0 for three minutes.

Workout 2 – 40 minutes

1) Warm up for 5 minutes at 3.0

2) Run at an easy pace for 5 minutes.

3) Increase the speed by 15 seconds per mile and run for one minute.

4) Decrease the speed back down and run for 5 minutes.

5) Increase the speed by 30 seconds per mile and run for one minute.

6) Return to an easy pace for 5 minutes.

7) Increase the speed by 45 seconds per mile and run for one minute.

8 ) Back to an easy pace for 5 minutes.

9) Increase the speed by one minute per mile and run for one minute.

10) Run easy for 5 minutes.

11) Increase the speed by one minute and 15 seconds per mile and run for one minute.

12) Cool down with 5 minutes of walking.

Workout 3 – 30 minutes

1) Warm up at 3.5 for 5 minutes.

2) Jog for 5 minutes at 6.0.

3) Sprint for one minute (usually at 8.5 or 9).

4) Stop by jumping to the side, a foot on each edge of the treadmill while it’s still going and rest for 30 seconds.

5) Do step 3 & 4 ten times for a total of 15 minutes.

6) Cool down for five minutes.

And that is all!

how to dig yourself out of a workout rut

As of lately I’ve been experiencing a little case of motivational issues when it comes to exercising.

Even thinking of running makes my booootay sore and beads of sweat form on my forehead.

Welllllll maybe that’s a bit of an exaggeration … But ever since I started working, my desire to get mah heart beatin flew out the window. All I want to do when I get home from work is eat, lie on the couch and eat some more.

So in order to jumpstart my fitness routine I started googling “how to get yourself out of a workout rut” and came up with this list (plus a few more that I thought of myself)!


Plan a short workout that doesn’t require getting in your car and driving to the gym. It can even be less than 20 minutes. Something is better than nothing! A few of Kristin (sister) and my favorite things to do when we want to get a quickie workout in are running up and down the stairs blasting music throughout our house, and shakin what our mama gave us in the kitchen. Sorry to reveal our secrets Kristin ;).

Wear your workout clothes around the house. You might suddenly have the urge to bust out some jumping jacks or pushups.

Change up your usual (and maybe boring) routine, i.e. go to the gym at a different time, try a new workout class, run outside, go hiking …

Hating the dreadmill? Try walking or running outside! And don’t forget to bring your dog, cat, guinea pig (kidding …) if you have one :).

Focus on the benefits not the difficulties. Remind yourself of how good you will feel after working out, how much more energized you will be, and how happier and slimmer you will look, rather than thinking about how hard that 5 mile run or spin class is.

Go to an exercise class! I find that working out with others around pushes me, because I compete with others in my mind (even though the instructors tell you not to compare yourself to others). This is an example of what goes on in my head: “That lady is lifting 10 pound weights … come on Kara if she can do it, you can too!” or “Wow that girl is squatting low, I bet can squat lower” or “I’m sooo sore but no one else is giving up so neither will I!” Maybe I’m the only one that does that, but I encourage you all to try it ;).

Ease into it after a long dry spell. You can’t except your body to be right back where it was before you stopped working out. Start with a brisk walk/run or yoga class and gradually work your way up to your usual workout routine.

Schedule a time in your calendar dedicated to exercise. This way you can’t give yourself any excuses NOT to go.

Make a new workout playlist to get yourself pumped up! This song always gives me a sudden burst of energy.

Buy a workout video to sweat and pant to in the comfort of your own living room ;).

Buy a cute workout top, running shorts, head band … whatever. Then go show it off at the gym :D.

Reward yourself for your hard work. A piece of chocolate, some fro yo, a jar of pb (oh wait .. that’s just me), a movie night, or a massage are all great options.

Email me, call your mom, find a workout buddy, join an online forum like Dailymile.

me & my sis just doin what we do

Working out doesn’t always have to be at the gym. Make it fun and mix it up! Play volleyball, tennis, soccer, racquetball, go rock climbing, jump rope, paddle board … the list goes on. Do something you like.

Boxing or tae bo are very popular, fun and calorie blasting workouts! And it makes you feel strong and fearless ;). Many models even do it.

Make goals and give yourself deadlines to meet those goals.

Post your goal in BIG WORDS somewhere that is easily visible to you every day. On the fridge, on your mirror, directly on the ice cream carton …


that's the right kind of attitude!!

Recognize and accept the ebb and flow. Motivation is not always a constant thing. Realize that every day your body will tell you what it is capable of, and sometimes it might say: “Today I want to sit on the couch, eat cookies and watch marathons of Jersey Shore.” Hey, I’m not gonna deny it. But while you’re feeling like a couch potato, don’t fret, because your motivation will soon return. In the meantime, think about your goal and do some of the things on this list until it comes back.

Stick with it! Don’t let obstacles in the road knock you over. Force yourself to keep moving forward towards success. (I guess force is kind of a strong word, but sometimes I feel like I have to force myself to work out or else I will never do it. After “forcing” myself though, I always feel happy I did it.)

Remember that working out isn’t only about burning calories and losing weight. Exercise not only improves your physical health, but livens your mood, wards off sickness, raises your self-confidence and builds friendships.

So next time you are feeling unmotivated, tired, worn down and have absolutely no energy to work out, I encourage you to try something on this list!

And now, I’m going to work my lil booty off at zee gym!
