WIAW #13

Happy first Wednesday of May! I can’t believe it’s already that time…I’m almost finished with my second year of college! This  cannot be real life. May is going to be an eventful month: Pi Social (Pi Beta Phi’s philanthropy event where we get pied in the face to raise money for literacy haha!), Cinco de Mayooo, Whole Earth Festival (if you enjoy hippies, henna and delicious vegan food, you’d love this), Houseboats on Lake Shasta, midterms and lots of schoolwork (but that’s a given!).

I’m so happy its MAY!!!!!!

Let’s move on to what I ate on the very first Wednesday of the month!

Breakfast:

smoothie in a bowl: huge handful of spinach, 1 c frozen bluebs, 1 scoop vega vanilla protein powder, cinnamon topped with ezekiel golden flax cereal and bee pollen (i’ve been feeling a little sick lately and am not sure if it’s allergies so i picked up some of this at the co op to see if it makes a difference! look out for it on an upcoming freaky food friday..)

After an intense spin class and some weight lifting, (I focused on arms and butt today. Try doing arm circles with 2 lb weights for a minute or two and your arms will be BURNING!) I was so ready for lunch!

Lunch:

salad with chopped apple, cukes, carrot, blue cheese, nutritional yeast, hemp seeds and balsamic dressing & a dr. praegers veggie burger with spicy brown mustard on the side!

Dinner: 

another smoothie with spinach…seriously cannot get enough of smoothies these days. they are so quick, filling and easy when you’re in a pinch for time (which i have been!). this one was soooo good. spinach, frozen banana, vega vanilla protein powder, psyllium, cinnamon, spoonful of pb topped with cacao nibs! it tasted like a peanut butter cup!

Snack: 

museli (oats, dried blueberries, raisins, pecans, pistachios) + ezekiel golden flax cereal + homemade almond milk (!!!!) + strawberries. perfect study snack!

I also tried one of these delicious cornmeal pancakes my roomsicle Amy made. Find the recipe here..SO GOOD!

WIAW #11

Hiii loves!

Okay so I’ve literally been the worst blogger ever. I’ve missed you guys! How are ya?!

I am proud to announce, I survived the two weeks of being vegan! Sorry for the lack of posts of what I ate, I have one coming up! Since then, I’ve been still eating vegan at home, although I went out to eat a couple days ago and I ordered chicken. I also made catfish for the boyf the other night (it was delish, recipe to come). The hardest thing to live without has definitely been cheese, and vegan cheese really doesn’t compare unfortunately.

After being vegan for 2+ weeks, I didn’t feel much different (I think it’s because I didn’t eat that much meat and dairy to begin with) and I’ve maintained the same weight. As of right now, I’ve decided that I will eat mostly vegan, but occasionally have some cheese, chicken or fish if I want when I eat out or am really craving it.

Today, I ate vegan!

Let’s see what it was….

pre-cooked quinoa (instead of oats! highly recommend!!) with half a banana, vanilla almond milk, cinnamon and topped with banana walnut brulee (recipe to follow).

Banana Walnut Brulee

serves 2

Ingredients:

1/2 c walnuts

1 T agave (can also use honey or maple syrup)

1/4 t cinnamon

tiny dash vanilla extract

1/2 banana, chopped

dash of cayenne

cooking spray

Directions:

Spray a frying pan with cooking spray and set it to medium-high heat. In a separate bowl, mix all the ingredients together. Add to skillet and let it saute for 3-5 minutes, stirring often. Remove from heat, and add to whatever you like!

On Wednesday’s I have five classes, including a 3 hour biology lab, so I don’t have much time to eat! I practically swallowed a whole smoothie in one gulp as I ran after the bus on the way to my next class…..

I came home ravishing (remind me to pack a snack next Wednesday gahhhhhh!) and fixed that with this:

some nasty looking black bean soup (my recipe with added carrots and onions) and angela @ ohsheglows dinosaur dill crunch salad (made with curly kale instead of dinosaur kale) - pretty good! i think i needed to let the kale marinate in the dressing a little longer, it was a hard to chew and i'm not used to eating it raw.

And of course……

best. dessert. ever. almond breeze vanilla ice cream with blueberries and homemade chocolate sauce (cocoa powder, agave, and a little splash of almond milk!). sweet tooth satisfied.

Yum!!!!

Okay off to do some Stats homework and read pages and pages in my Biology book! Soooo freakin excited.

happy, healthy holidays!

Hiii!

Oh how I’ve missed you guys! My excuse to explain my absence is that I thoroughly enjoyed my time with friends and family, sans technology. Who can blame me?

I hope everyone had a wonderful holiday and safe New Years! I’ve been a busy girl so here are some pictures to catch you all up :)!

my dad knows me so well. i love dogs and peanut butter! best card ever and best dad ever.

after exchanging & opening gifts we nibbled on these babies and sipped tea (from Aveda...ya I know weird. it's a hair salon that sells tea! but it's my new favorite!) while watching christmas with the kranks.

Christmas morning, I woke to find some sparkly Juicy Couture stud earrings, Burt’s Bees hand cream, lotion & chapstick (addicted to their almond milk beeswax hand creme and chapstick), yoga pants & other goodies! Then my dad, Kristin and I had a plane to catch! Every winter, we meet up with my dad’s side of the family for a ski trip. We’ve been going to Big White in BC, Canada for years but just last year switched to Whistler. I LOVE it!!

Kristin and I are the only snowboarders in the fam so we usually stick together – getting stuck in powder, falling while exiting the chairlift, flying off jumps in the terrain park, braving cliffs, and taking pictures on the slopes.

It was a fabulous night to say the least. And I’ve finally decided on a New Year’s resolution. My friend Sheeva came up with one that was too good, I had to steal. It is to make sure my friends and family know how much I love them because the unexpected sometimes does happen, and life is much too short.

Tonight my sister, mom and I are going to watch the documentary, Forks Over Knives. I heard about it from a friend who told me I must watch it!! I’m excited and will have a review tomorrow :).

WIWEFW: What I Will Eat Finals Week

Happy tuesday punkins!

It’s the beginning of a new week…and finals for me! Bleh.

During finals week, I need lots of brain food to keep me alert and sharp for the endless hours of studying.

I will be starting off my days with something like…

2 scrambled eggs with one morningstar sausage pattie, yellow bell pepper, crazy feta, spinach and an apple on the side!

1/4 c oat bran, 1/4 c oats, 1 scoop sunwarrior vanilla protein powder, cinnamon & water microwaved for 3 min. topped with chopped apple, walnuts & maple syrup.

Snacks to quietly munch on in the lib…

the only flavor of zing bar i've tried! chocolate and coconut is a winning combo. definitely recommend!

one banana halved and slathered in ab, and topped with either coconut & choco chips or hemp seeds and goji berries! maybe too messy for the lib!

Lunch & dinner…

spaghetti squash with meatless grounds, tomato sauce & assorted veggies

brinner! scrambled veggies & eggs and toast with chia seed jam

curried vegetables and tofu!

And knowing me, finishing with something sweet!

this will do.

Tonight as a little good luck token for finals I whipped up these babays.

Reese’s Peanut Butter Cup Blondies

Ingredients:

3/4 c brown sugar

1/4 canola oil

3 egg whites

1 T vanilla extract

1 c whole wheat flour

1/3 c oats

2 t baking powder

1/4 t salt

~ 1 c chopped mini Reese’s Peanut Butter Cups

Directions:

Preheat oven to 350°F. Coat an 8 by 8 dish with cooking spray. Mix the sugar and oil in a large bowl with a wire whisk. Add the egg whites and vanilla extract and whisk again.

Add the flour, oats, baking power, and salt. Stir until just combined.

stir stir stir!

Chop up the mini Reese’s. I chopped them in quarters first, then got lazy and just halved them!

Add the Reese’s and fold.

With a rubber spatuala scoop the mixture into the baking dish.

top with chocolate chips if desired!

Bake 25-30 minutes, until the dough is firm in the center and a toothpick/fork comes out clean when inserted.

P.S. These will go fast, so you may want to make another pan for yourself…just kidding..sorta.

oatmeal made with 1/2 c oats, 1 scoop vanilla protein powder, ~1/4 c milk (coconut), ~1/4 c water, and a couple generous shakes of cinnamon. cooked for 2 minutes in the micro, with strawberries, coconut butter and cacao bliss on top! <-- i couldn't finish it all, it was too rich! next time i'm just going to use either coconut butter or cacao bliss.

trail mix with mulberries (first time trying them! they are the golden pine cone looking things), goji berries, raw cashews, goldenberries and cacao nibs. this is a unique mix and a little different from your usual trail mix, but it grew on me and i'm definitely going to buy this again!

power snacks - little squares of on-the-go deliciousness. made with dates, chia seeds, sesame seeds, raisins, sunflower seeds, cacao, goji, maca, lucuma, and camu-camu powder. all of which are superfoods and natural!

cacao nibs! yummm! not as sweet as chocolate chips, but healthier 😉 perfect for sprinkling on yogurt, oatmeal, smoothies, etc.

and i’ve come out of hiding

Hi loves!

I’m sorry (for the tenth time) that I’ve been so MIA lately.

Rush week is finally over, phew! It was such an eventful, fun, yet exhausting week and I feel like I need a whole week to recover! Butttt, school has started so that means no break for moi! This quarter I am taking Chemistry, Biology, Research Methods in Psychology, and a class called Mushrooms, Molds and Society (sounds interesting huh?!). I’m ready for it all to fly by.

Here is a recap of what I’ve been up to lately!

Trying new things…

a mouthwatering nugget sandwich which included: multigrain bread with honey mustard (omg best ever), grilled chicken, lettuce, cucumber, sprouts, red onion, avo, and bell peps! with an iced green tea on the side (new fave! it's naturally sweet so you don't need to add sweetener!).

chicken, veggies and brown rice from ket mo ree (awesome thai food restaurant) for julia's birthday!

a refreshing smoothie made with one frozen banana, one cup unsweetened vanilla almond milk, couple handfuls of spinach (i swear you can't taste it!), 1/2 cup frozen raspberries, a few shakes of cinnamon and topped with chia seeds!

fatty salad: mesclun lettuce, cukes, slivered almonds, garbonzo beans, and leftover herbed salmon (from the nugget). dressing was lemon juice, splash of flax seed oil, red wine vinegar and pepper!

sauteed veggies and tempeh in coconut oil, bragg's liquid aminos and bragg's sprinkle (both soo good i def recommend!).

winner winner chicken dinner (cooked in a skillet with s&p, bragg's sprinkle, and EVOO <-- extra virgin olive oil). with a side of broccoli and sauteed veggies.

a sunshine bbq veggie burger (wasn't that great, i prefer the original flavor!) with sauteed kale and bell peppers.

Work work workin out…

I was getting a little bored of running 5 miles on the treadmill (i don’t know how i did that over the summer) so I’ve been changing it up and doing more HIIT workouts (high intensity interval training). Here are a few I’ve been trying!

Workout 1 – 30 minutes

1) Warm up at an easy pace (3.5) for 3 minutes.

2) Jog at 6.0 for 2 minutes.

3) Increase speed to 7.0 for one minute.

4) Increase speed to 7.5 for one minute.

5) Increase speed to 8.0 for one minute.

6) Increase speed to 8.5 for one minute.

7) Repeat steps 2-6 three more times.

8 ) Cool down, walk at 3.0 for three minutes.

Workout 2 – 40 minutes

1) Warm up for 5 minutes at 3.0

2) Run at an easy pace for 5 minutes.

3) Increase the speed by 15 seconds per mile and run for one minute.

4) Decrease the speed back down and run for 5 minutes.

5) Increase the speed by 30 seconds per mile and run for one minute.

6) Return to an easy pace for 5 minutes.

7) Increase the speed by 45 seconds per mile and run for one minute.

8 ) Back to an easy pace for 5 minutes.

9) Increase the speed by one minute per mile and run for one minute.

10) Run easy for 5 minutes.

11) Increase the speed by one minute and 15 seconds per mile and run for one minute.

12) Cool down with 5 minutes of walking.

Workout 3 – 30 minutes

1) Warm up at 3.5 for 5 minutes.

2) Jog for 5 minutes at 6.0.

3) Sprint for one minute (usually at 8.5 or 9).

4) Stop by jumping to the side, a foot on each edge of the treadmill while it’s still going and rest for 30 seconds.

5) Do step 3 & 4 ten times for a total of 15 minutes.

6) Cool down for five minutes.

And that is all!

freaky {food} friday: chia seeds

Haiii friends!

Happy Friday! Today I will be introducing you to a ‘freaky’ food that I’ve tried.

Every Friday, I am going to try to feature an ingredient that you would not normally buy or maybe haven’t heard of. I will tell you what it is, what it tastes like, the benefits of eating that ingredient, the nutrition facts, where to buy, and how to eat it! I will also include recipes that call for the ingredient from other bloggers or magazines that I’ve been wanting to try AND I will grade the ingredient! Butttt best of all, I’ll include an original Blondie Bakes and Bikes recipe! Yayyy :D!

This freaky {food} friday is dedicated to CHIA SEEDS!

For you avid blog readers, chia seeds are not ‘freaky’ and are old news, but to everyone else, you’re probably wondering … “whatttt are those strange things?!”

Dontcha remember those ch-ch-ch-chia pets?!

you may have had one!

Well, now you can do something even more exciting than sitting there watchin em grow (I know you did that) … YOU CAN ACTUALLY EAT THEM!

Let’s get to it.

What are chia seeds? 

“Chia is an edible seed that comes from the desert plant Salvia hispanica, a member of the mint family that grows abundantly in southern Mexico. You may have seen chia sprouts growing on the novelty planters called Chia Pets, but historically, the seeds have been the most important part of the plant. In pre-Columbian times they were a main component of the Aztec and Mayan diets and were the basic survival ration of Aztec warriors. I’ve read that one tablespoon was believed to sustain an individual for 24 hours. The Aztecs also used chia medicinally to stimulate saliva flow and to relieve joint pain and sore skin.” – wise words of Dr.Weil

What do they taste like?

Chia seeds have a mild, nutlike flavor. But you can add them to anything without changing the taste of the food. I barely notice when I put chia seeds in my oatmeal or smoothies, however, I don’t eat them plain.

Why should you eat chia seeds?

  • higher in omega-3 & 6 fatty acid’s than flax seeds
  • don’t need to be ground up like flax seeds to get the full nutritional value
  • virtually tasteless and VERY good for you
  • 2 x the protein of any other seed or grain (and is a plant based protein = good for vegetarians!!)
  • 5 x the calcium of milk
  • 2 x the amount of potassium in bananas
  • 3 x more iron than spinach
  • high fiber content (more so than flax & oats), which aids with weight loss, keeps you full, among other things ;).
  • 3 x the antioxidants in blueberries (such high antioxidant content keeps them from going bad … can be stored in a dry place for up to 4-5 years!)
  • levels blood sugar & great for diabetics
  • gluten-free
  • helps relieve thyroid conditions, hypo-glycemia, and acid reflux
  • contains many essential minerals such as magnesium & zinc

What are their nutrition facts?

1 tablespoon of dry chia seeds have about 60 calories, 5 g of fat, 6 g of carbs, 6 g of fiber, and 3 g of protein.

Where can I buy them?

I buy them in bulk at Whole Foods, but they can also be found online.

How do I eat these things?!

Chia seeds can replace flax seeds in any recipe. They can also replace eggs in cooking (1 T ground chia seeds + 3 T water, let sit and will form a gel-like consistency like eggs). I like to add them to oatmeal or smoothies. I have yet to try them in salads, salsas, scrambled eggs … but that seems to be popular on some other blogs!

Chia seeds are awesome! I love that you can’t taste them but you’re getting an extra protein and fiber boost. They get an A+! I urge you to TRY THEM NOW!!!

A Blondie Bakes and Bikes Recipe!

Tropical Coconut Chia Smoothie

serves 2

Ingredients:

1 c So Delicious Original Cultured Coconut Milk (makes it more creamy but you could also use any kind of milk)

1/2 c water

1/4 c frozen strawberries

1/2 c frozen mango

1/2 c frozen pineapple

2 T chia seeds (and more for adding on top if you’d like)

Directions:

Put all ingredients in blender and blend until smooth. Enjoy your delicious taste of paradise ;)!
