vegan eats

Hi babydolls!

Sorry I’ve been MIA for quite a while…the quarter just started Monday so I’ve been figuring out my classes and catching up with friends I haven’t seen in a whole month!

My vegan diet has been going well so far, I have completed a week plus two days now! Surprisingly finding things to eat has been easy, although I’ve had to get a little more creative and do some planning ahead of time.

When I was at home, my sister and mom had some delicious looking (and smelling!) cheesy pesto bread with their dinner and I would have loved a big bite of it, but I told myself that I couldn’t give in quite yet. I do reallllly really miss cheese and eggs, but I’ve had no cravings for meat so far!

As of now, my thoughts about this whole vegan ordeal is that I do not want to deprive my body of anything it craves. If after 2 weeks I’m craving cheese or eggs, I will allow my body some cheese and eggs! There’s no sense in torturing and depriving myself.

Now I’ll let ya guys in on what I’ve been eating lately ;).

sprouted whole wheat toast with ab & pb and fresh berries. my mouth is watering just looking at those berries right now! get in mah belly.

i tried an amy's indian spinach tofu wrap. it was perfect for a quick and delicious small meal!

portobello mushroom burger/sandwich with all the fixins and sauteed green beans with hazelnuts.

crocodile crunch from alicia silverstone's "the kind diet." 1 t spirulina, ~3/4 T almond milk, ~3/4 T orange juice, ~3/4 T maple syrup, 1 t almond butter. mix sauce and pour over fresh fruit and coconut. top with kamut puffs, granola or whatever cereal you like! beware: this looks gross (I mean it issss green) but it's actually DELICIOUS and may turn your teeth temporarily green hehe.

butternut squash and vegetable curry over brown rice and topped with coconut and roasted almonds & cashews (in bragg liquid aminos)

So there ya have it! Not exactly everything I’ve been eating lately, but a summary! Today, I had a delicious falafel pita sandwich with cucumbers, lettuce, tomato, hummus and tahini sauce from a Mediterranean cafe. I’m determined to recreate it. And tonight I think I’ll make some overnight oats for tomorrow’s breakfast! Mmmm.

But first…I have to show off my newly painted nails. Quite the upgrade from yesterday’s multi-colored-testing-out-different-nail-polishes look!

Last night, I hung out with my besties Sheeva and Hannah. We painted nails and chatted while watching a few of our favorite movies (The Proposal and Wedding Crashers anyone?!). Also, if you haven’t done so CHECK OUT SHEEVA’S BLOG! Kaythanks.

I’m sporting a different (and sparkly) nail polish on my ring finger if ya couldn’t tell. I think it was a trend last year…but whatevs.

Okay..well onto other news.

What I ate today!

At Sheeva’s this morning we made oatmeal! I didn’t get a pic but this is pretty much what it looks like and how it was made:

1/3 cup oats

add 1/2 a chopped up (or mashed) banana, cinnamon & nutmeg, or whatever other spices you like!

add ~1/3 c water or milk (or both...I usually put in half water half vanilla almond milk)

microwave for a minute and the banana will get all smooshy! smoosh smoosh it up some more 😉

microwave for another minute and it should look like this! if you like your oatmeal more liquidy, either dont microwave for as long or add more water/milk

Sorry, these pictures are very fugly! But I added the other 1/2 of banana and a little bit of TJ’s vanilla almond granola on top! It’s not super sweet like most prepackaged oatmeal you would buy at the store, so if you like that, this may take a little getting used to. Personally I think the banana makes it just sweet enough (espec if it’s a ripe one!) but you can definitely add maple syrup, brown sugar, stevia, whatever your heart desires! To step up the fun factor even more, you could choose from a variety of other toppings such as: fresh fruit, chia seeds, nuts, peanut butter, or coconut to put on top! Yummm. Lunchtime rolled around and I was feeling like having everythanggg…so I did just that!

clockwise: cukes & carrots with homemade spicy hummus (recipe below!), red cabbage with leftover grilled tilapia & salsa, flax cracker (review below) & cheese, apple with pb!

and a handful of these awesome rice chips! half eaten one on the table...nice

Spicy Sun-dried Tomato Hummus 

{fat free & gluten-free}

Ingredients:

1 can garbanzo beans

1/3 c sundried tomatoes (not in oil)

1/4 of a lemon (skin and all!)

juice of the other 1/4 lemon

2-3 cloves garlic

1/2 tsp cumin

1/8-1/4 tsp cayenne pepper (depending on how spicy you want it!)

1/4 tsp paprika

1/2 tsp salt, or to taste

Ground black pepper

all ya need!

Directions:

Blend ingredients in a food processor until smooth.

mixin it all up! (i added more garlic later if you're wondering why there is only one clove!)

garnish with some cilantro and it's ready for dippin!

I also tried somethin new with my lunch today! Flackers! Say whaaaaa?!

flax + crackers = flackers! duhh...

with a hint of rosemary! serious crunch and supa addicting. buy them at WF's!

Love these and definitely getting them again!

Dinna time!

Grilled Chicken Greek Salad

{vegetarian option too!}

adapted from Sunset magazine

serves 4

Ingredients:

3 tbsp lemon juice, divided

3 tbsp olive oil, divided

1 tbsp minced garlic, divided

1 tsp each salt and pepper, divided

1 1/2 tsp ground cumin, divided

2 boneless, skinless chicken breasts (OR if vegetarian, you could use tofu or tempeh)

2 tbsp tahini (sesame seed butter)

1 can garbanzo beans, drained and rinsed

2 tomatoes

1/4 red onion, thinly sliced

1/2 sliced red bell pepper

1/2 c cucumber

2 big handfuls of spring lettuce mix

1 cup flat-leaf parsley

3 oz crumbled feta cheese

Directions:

Heat grill to high (450 to 550 degrees). Mix 1 tbsp each lemon juice and oil, 1 tsp garlic, and 1/2 tsp each salt, pepper, and cumin in a medium bowl. Add chicken (or veg option) and turn to coat. Let marinate for 30 minutes or however long you can wait ;).

Grill chicken, turning once, until cooked through and browned, about 10-15 minutes. (It took me longer because I’m a newbie bbquer so I was constantly turning the bbq down, running inside and asking my dad to check it…haha. So if you’re a pro, bbq it like you normally do!)

burnin up! not really...they survived (the weird things below the chicken are tempeh, which i will talk about for a freaky food friday)

Make the dressing by whisking together the remaining 2 tbsp each lemon juice and oil, 2 tsp garlic, 1/2 tsp each salt and pepper, and 1 tsp cumin with the tahini in a large bowl. Add the veggies and toss to coat. Slice chicken (or in my sister’s case, tempeh) and set on top. Sprinkle salads with parsley and feta!

Do you tend to stick to the same thing for breakfast? Or do you like to try new things? I usually have the same thing, end up having it so often that I get sick of it, search for something new, love that, and then the cycle repeats itself!

a weekend in the life.

Heyy everyone!

Hope you had a relaxing, fun-filled weekend!

Mine was definitely fun-filled, not so sure about relaxing…

I’m a major procrastinator so it was only natural of me to put off apartment shopping until I had a week left before my move-in date. I’ve been running (literally) all over town with my three page long to do list frantically throwing things into my basket, re-thinking items, getting distracted by things I REALLY didn’t need, trying to find the best deals, etc, etcccc.

Sorry to the woman I ran into at Target as I was power-walking slash trying to refrain from sprinting down the isle because I decided (while the cashier was in the middle of scanning my items) that I really did need that pink metallic shimmery nail polish.

i got the color on my ring finger! and i have yet to remove the different colored polishes from my fingernails...classy

From Home Goods I bought: a dirty clothes hamper, metal over-the-shower-nozzle caddy (I don’t know how else to explain it!), clear shower curtain, over-the-door purse/coat hanger, and pink himalayan salt (which I just found out from my friend Sheeva that you can get at TJ’s for $2!!)

From TJ Maxx I bought: a black and white flowered shower curtain.

From Tar-jayyy I bought: PINK METALLIC NAIL POLISH. Oh and Dr. Bronner’s Peppermint Castile Liquid Soap (which claims to have 18 uses! My mom uses to clean floors, counter-tops, etc…I’ve also heard it can be used as body wash!), spray bottle, and glass jars (for storing snacks, sugar, flour, nuts, etc…they were cheaper to buy in bulk than individual so me trying to bargain shop, got them!)

Later I found myself wandering into Borders, but I managed to score 3 cookbooks for $20! Yeaaaahhh.

so sad but so happy borders is closing?!

The Pretty Delicious cookbook has pretty pictures and delicious-looking recipes that I can’t wait to try out! Peas and Thank You is a cookbook by fellow food blogger Mama Pea and I just had to have it! Eat Fat Lose Fat is a book & cookbook all about the benefits of coconut oil! (I’ll be doing a post about that soon.)

I also made a trip to Joann’s to pick up some fabric for a bulletin board and for this white lamp that I want to liven up! Glitter and beads are the way to do it ;).

Now I’m off to do some returns at the mall! Ughh.
